Lowcarb Curry

Cauliflower is my new superfood there a so many alternatives that cauliflower can substitutions for. In this recipe I have used cauliflower instead of rice.

Curry:
200 ml of coconut milk, light
250g chicken breast fillets
One medium onion
1 yellow bell pepper
1 tablespoon curry or masala Graham
Freshly ground black pepper
40g spinach
1 tbsp of extra virgin olive oil or coconut oil

Rice:
400 g of cauliflower

The curry was made the normal way.
The rice: tear the caulifloweron a grater. You can also blend it for a finer result, but I like it better on a grater.
After you have grated the cauliflower put it in a bowl and give them a few minutes in the microwave, you can also vapors the cauliflower, the point is just to get it warm without boiling.
