Healthy Chocolate Cookies

After experimenting a bit with paleo baking work, I really got a taste for the way to use coconut and nuts as flours to make gluten-free food.

1 cup almond flour
1 cup coconut flour
4 tablespoons of coconut oil
3 tablespoons raw honey
Grain from a vanilla pod
Pinch of salt
4 eggs

First
Peanuts & Chocolate
A handful of dark chocolate into small pieces
A handful of roasted peanuts

Second
A handful of dark chocolate into small pieces
A handful of macadamia nuts
A handful of raisins
 
First I mixed the dry stuff in one bowl. Salt, almond and coconut flour, make sure it is finely ground.
The wet stuff in another: eggs, vamillie, honey and coconut oil. Honey and coconut oil must be liquid.
Mix then the liquid and the dry bowls, together with a spoon. I halved the potion to make two different variations.
One where I put peanuts and chocolate in, and the other with chocolate, nuts and raisins.
Make sure to blend nuts and chocolate shortly or chop it.
Shaped them into cookiesin about 3 cm. They don’t change shape or size in the oven.
Put them in the middle of a preheated oven at 190 degrees Celsius.
I gave them 13 minutes.

Efter at have eksperimenteret lidt med paleo bageværk, har jeg virkelig fået smag for måden at bruge kokos og nødder som mel, for at lave glutenfri mad.

Ca. 3 dl mandel mel
Ca. 2 dl kokos mel (Hæld i til det får den ønskede småkage konsistens)
1/2 kop af kokosolie
2 store spsk honning
Korn fra en vanillestang
Lidt salt
4 æg

Fyld:

Peanuts & Chokolade
En håndfuld Mørkt chokolade i små stykker
En håndfuld Ristet peanuts

2.
En håndfuld Mørk chokolade i små stykker
En håndfuld Macadamia nødder
En håndfuld Rosiner

Først blandet jeg de tørrer ting en en skål. Salt, andel og kokos mel, sørg for det er fint malet.
De våde ting i en anden: æg, vamillie, honning og kokos olie. Honning og kokosolie skal være flydende.
Bland så det flydende og det tørrer sammen med en ske. Jeg halverede potionen, for at lave to forskellige variationer.
Den ene hvor jeg puttede peanuts og chokolade i, og den anden med choko, nødder og rosiner.
Sørg for at blend nødder og chokoladen kort, eller fin hak det.
Formede dem til kager på en diameter på ca. 3 cm. De ændre ikke form eller størrelse i ovnen.
Sæt dem i midten af en forvarmet ovn på 190 grader celsius.
Jeg gav dem ca. 13 minutter.
